  • Total Time: 20 minutes
  • Yield: 4 1x

Ingredients

Scale
  • 2 cups all-purpose flour
  • 4 Tbsp granulated sugar
  • 4 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1 3/4 cups milk
  • 4 Tbsp unsalted butter, melted
  • 2 tsp pure vanilla extract
  • 1 large egg

Ingredient Notes & Substitutions :

  • Milk: You can use whole milk, almond milk, or oat milk.
  • Butter: Swap with coconut oil for a dairy-free option.
  • Flour: For a healthier version, use whole wheat flour.

Instructions

Step 1: Prepare the Batter

  1. In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt.
  2. Make a well in the center and add the milk, melted butter, vanilla extract, and egg.
  3. Whisk together until the batter is smooth but slightly lumpy.
  4. If the batter is too thick, add a little more milk (1 Tbsp at a time) until you reach the desired consistency.

Step 2: Cook the Pancakes

  1. Heat a nonstick pan or griddle over medium-low heat and lightly grease with butter.
  2. Pour 1/4 cup of batter onto the pan and gently spread it into a round shape.
  3. Cook until bubbles form on top and the underside is golden brown, about 2 minutes.
  4. Flip with a spatula and cook for another 1-2 minutes until golden brown.
  5. Repeat with the remaining batter.

Step 3: Serve and Enjoy

  • Serve warm with maple syrup, honey, or fresh fruit.
  • Add toppings like whipped cream, nuts, or chocolate chips for extra flavor.

Notes

  • Let the Batter Rest – Allowing the batter to rest for 5-10 minutes helps the ingredients combine and results in fluffier pancakes.
  • Don’t Overmix – A few lumps in the batter are fine! Overmixing can make pancakes dense instead of light and airy.
  • Check Your Baking Powder – Expired baking powder won’t provide the rise needed for fluffy pancakes. Make sure it’s fresh.
  • Use Medium-Low Heat – Cooking pancakes on too high heat can cause them to burn outside while remaining uncooked inside.
  • Customize with Toppings – Try chocolate chips, blueberries, or chopped nuts in the batter for added flavor and texture.
