To make the cheesecake :

  • 2 (8-ounce) packages of soft cream cheese
  • 1/2 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 2 large eggs

For the layer of lemon and blueberries :

  • 1 box of yellow cake mix (16.5 ounces)
  • 1/2 cup vegetable oil 3 large eggs
  • 1/2 cup of water and 2 tablespoons of lemon juice
  • 1 cup of fresh blueberries
  • For the icing on top
  • 1 (8-ounce) package of soft cream cheese
  • 1/2 cup unsalted butter, softened
  • 3 cups of sugar powder
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice

Instructions

Step 1: Turn your oven on and set it to 350°F.

Step 2: Beat the cream cheese, sugar, and vanilla extract together in a large bowl until smooth. Add the eggs one by one and mix well after each one.

Step 3: Mix the cake mix in a separate bowl, following the directions on the box. Add the oil, eggs, water, and lemon juice. Add the fresh blueberries and stir.

Step 4: Use cooking spray to grease a 9-inch springform pan, then pour about two-thirds of the cake batter into the pan.

Step 5: Pour and spread the cream cheese mixture evenly over the cake batter in the pan.

Step 6: Pour and spread the rest of the cake batter over the cream cheese layer.

Step 7: Bake the cake for about 40 to 45 minutes, or until a toothpick stuck in the middle comes out clean. Let the cake sit in the pan for at least 10 minutes before you try to take it out.

Step 8: Beat the cream cheese, butter, powdered sugar, vanilla extract, and lemon juice together until smooth.

Step 9: Spread the frosting on the top and sides of the cake. If you want, you can add more blueberries on top.

TIPS ON HOW TO MAKE THE BEST CHEESECAKE

Make sure your cream cheese is at room temperature before you begin to mix it. This will make mixing easier and keep lumps from forming.

If you don’t want cracks in your cheesecake, bake it in a water bath. Just put your cheesecake in a bigger baking dish and pour hot water around it before you put it in the oven.
