Steak Marinade

  • 112 lbs. of sirloin steak cut into 1” cubes
  • ⅓ cup soy sauce low sodium
  • 1 tablespoon olive oil
  • 1 tablespoon Sriracha sauce

Potatoes

  • If the baby potatoes are too big, cut them in half.
  • 1 tablespoon olive oil
  • 3 spoons of butter
  • 5 cloves of garlic, cut up.
  • 1 teaspoon of Italian spice
  • 12 teaspoons of salt or taste 12 teaspoons of black pepper or to taste

Instructions

Put all the ingredients for the steak marinade into a medium-sized bowl and mix them all together. Put away while the potatoes are cooking.

Put the tablespoons of olive oil and one tablespoon of butter in a large skillet and heat it over medium-high heat. Add the potatoes to the pan and cook for about 8 minutes, until they are browned and cooked through. Place on a plate.

Add the rest of the butter, the garlic, and the Italian seasoning to the same pan. For 30 seconds, cook until the smell is nice. Add the steak and spread it out in a single layer. Set aside any marinade that is left over. Don’t touch it for a minute, then toss it and cook it for another minute.

Pour the marinade that you saved over the steak and cook for one more minute. Put the potatoes back in the pan and cook until they are hot again. Salt and pepper can be added to taste.

Take it off the heat and serve it right away with fresh parsley or Parmesan cheese on top.

Notes

  • Use both the oil and the butter. Make sure to mix the butter with the olive oil. By doing this, the milk solids in the butter won’t burn and turn bitter.
  • Cook the potatoes in their own pots. You have to cook the potatoes first not only because they take longer to cook, but also because the meat needs that time to marinate.
  • Don’t cook the meat too much. If you like your meat well done, go for it and cook away! But if you don’t, make sure to only cook each side of the sirloin pieces for a few minutes.
  • When stored in an airtight container or freezer bag, leftovers can stay in the fridge for up to 3 days or in the freezer for up to 3 months.
  • To heat them up again, just put them in the microwave on medium heat for about 3 minutes. If you prefer, you can also heat them up in a skillet. If the leftovers were frozen, put them in the fridge overnight to thaw. The next day, heat them in the oven at 350°F (176°C) for about 15 minutes.
