Ingredients
For the Dough:
1 cup butter (room temperature, not too soft)
1 cup light brown sugar (packed)
¾ cup granulated sugar
2 large eggs
2 teaspoons vanilla extract
Blue food coloring (as needed for desired shade)
1 teaspoon salt
2 teaspoons baking powder
3 cups all-purpose flour
Mix-Ins:
¾ cup semisweet chocolate chips
½ cup white chocolate chips
¾ cup chopped Oreos (about 10 cookies)
¾ cup chopped crispy chocolate chip cookies (e.g., Famous Amos, Chips Ahoy Minis)
¾ cup milk chocolate discs or chunks of milk chocolate bar
For Topping:
Extra semisweet chocolate chips
Extra white chocolate chips
Extra chopped Oreos
Extra chopped crispy chocolate chip cookies
Instructions
1. Prepare the Dough
Preheat your oven to 350°F (175°C).
Cream the butter and sugars together for 1 minute until smooth.
Add eggs and vanilla; continue creaming for 3 minutes until the mixture becomes light, fluffy, and pale.
Mix in blue food coloring to achieve the desired vibrant blue color.
2. Add Dry Ingredients
Gradually add salt, baking powder, and flour. Mix until just combined; avoid overmixing.
3. Incorporate the Mix-Ins
Fold in semisweet chocolate chips, white chocolate chips, chopped Oreos, and crispy cookies.
If the dough feels too soft, refrigerate for 30 minutes to prevent spreading during baking.
4. Assemble the Cookies
Scoop out 2 tablespoons of dough, flatten slightly, and place 2-3 chocolate discs in the center.
Wrap the dough edges around the chocolate, then top with another 2 tablespoons of dough.
Decorate the tops with additional mix-ins for an extra indulgent look.
5. Bake and Cool
Place dough balls on a lined or greased baking sheet, leaving plenty of room for spreading.
Bake for 10-12 minutes until edges are set but centers remain soft.
Cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
Butter Consistency: Ensure the butter is at room temperature but not overly soft, as this helps maintain the cookie’s structure.
Food Coloring: Start with a small amount of blue food coloring and add gradually to reach the desired shade. Gel food coloring works best for vibrant colors.
Chilling the Dough: If the dough feels too soft or cookies spread too much during baking, chill the dough for at least 30 minutes.
Mix-In Variations: Feel free to customize the mix-ins with your favorite candies, cookies, or even sprinkles for a unique twist.
Cookie Shape: To ensure evenly shaped cookies, roll the dough into balls and slightly flatten the tops before baking.
Storage Tip: For the freshest cookies, store them in an airtight container with a piece of bread to maintain softness.
Baking Time: Keep an eye on the cookies—remove them from the oven when edges are set but centers look slightly underbaked. They will continue to cook as they cool.
Serving Suggestion: These cookies are delicious on their own but even better when served warm with a glass of milk or a scoop of vanilla ice cream.
